Days 391 - 394

We haven't been doing much, just hanging out and doing chores around the house, Mr has been spending as much time on the quilt as he can.

I even moved it to a different couch and he followed...


Day 390

Today is Valentine's Day. Josh and I have decided not to celebrate at all, and to cook at home. It was a nice day out so we grilled out and made a panel a cheese appetizer.
Basically it's fried cheese, that doesn't melt, you can get it at restaurants here, it's pretty good.
Ours was not as good as the restaurants, but not bad either. Josh also did homework, and Mr and I hung out.

Day 389

We woke up early and headed out, we drove through some pretty thick fog, but we made it to the US border in good time.
We were to Texas before the stores were even open, so we stopped for breakfast and then hit up Walmart and Target before the book store opened. We had to go to Texas because Josh's book for his next class was not available online. 
This was my first trip driving to Texas, now if you remember I did drive down through Texas last spring with my parent to bring Mr meow down, but never have I driven out of Mexico. I always fly.
So the feeling of crossing the border was a weird one, a sense of safety, and relief, and excitement.  It's so hard to explain the feeling of safety that washes over you when you come home.
It was also nice to shop, just shop. We don't have target or Kohls, and we don't just shop much here, so it was nice to browse! But we had to get home before dark, so it was quick browsing.
And then we were back to reality.


Day 388

I had the car today, but Josh forgot to fill it up with gas, and since he had the !exican debit card we use for gas we met up for lunch, and I tried out a new restaurant .
Tacos! Different than our normal taco joint, a more Down home Mexican feel to this place but it was good!

Days 386 & 387

I've been mostly cleaning and I moved the dresser over for Mr to be able see out side. 

And other than that we have been hanging out.

Days 384 & 385

Monday was spent in recovery from the party, and Josh was starting to feel better.
 But then Tuesday was Fat Tuesday! I have been wanting to make paczkis since last year!
So the adventure began with trying to get the yeast to rise, my house was only 58 degrees.
So I closed the kitchen doors and brought in a space heater, turned on the oven and hoped it would beat up, good news, it got it up to 70!

So I started by heating the water for the yeast.
Then mixing in all the other ingredients 
Then thanks to some friends. I had a suggestion to put boiling water and my dough in the oven in a covered bowl. 
And the rising got out of hand! But I was happy it rose!
After punching it down and letting it rise again. It was time to roll it out, and I cut them with a glass, it was funny the glass would want to pop back up.
Then I had to put my cut outs into the oven covered with a towel and rise in the oven some more
Then it's time to fry.
So I sugared them and tried an unfilled one.
Pretty good.
I made a lot
And the filing was really hard, I didn't get them to fill all the way through so I had to cut a hole in both sides and fill, and my bag was so gross and sticky, ugh, that was by far the worst part.

But I'm pretty happy with how they turned out.

Day 383

Can you believe it! Super Bowl Sunday!
and the Carolina Panthers were in it! The Detroit Lions have never made it to a Super Bowl, but my second state did! And I'm not even there to see all the crazy celebrating!
Thankfully we have a great group of friends and some from NC so we had a super bowl party, it was a ton of fun!
Sadly Josh couldn't make it, since he is still sick.

Days 380- 382

Josh has been sick, so he has been going to work, but coming home early. And then sleeping a lot, so Mr and I have been keeping quiet while he is here.
So lots of cuddle time.
And a little alone time for Mr
